How to Make French Sponge Cake
Ingredients: (I used double the amount of the following recipe to make 12 muffins)Egg Flour)
Yolk 40 grams, fine sugar 30 grams, vanilla extract 1/2 teaspoon,
Albumen 60 grams, fine sugar 15 grams, low flour 30 grams,Cornstarch Starch 20 grams,Coconut powder
French sponge mini cake making method
1. Mix egg yolks with 30 grams of fine sugar and vanilla extract using an electric mixer;
2. Beat the whites to form stiff peaks when foam begins to appear, then gradually add fine sugar and beat until hard peaks are formed with distinct wrinkles and small hooks;
3. Take one-third of the whipped whites and gently fold into step 1's egg yolk mixture;

4. Gently mix in the remaining whites;
5. Sift in low flour and cornstarch, then continue to gently fold until a uniform batter is formed;
6. Transfer the batter into a piping bag or plastic bag, pipe into paper molds about 9/10 full, and sprinkle with even layers of coconut powder;
7.Oven Preheat the oven to 170 degrees Celsius for 20-25 minutes.

Note
1. French meringue technique sponge cake mixture, using less liquid ingredients and folding in flour by pressing with a spatula can result in an evenly mixed batter;
2. To shorten mixing time, fold in the remaining whites into the egg yolk mixture slightly before adding the flour.
