How to Make Banana Mousse Cake
To make mousse Egg Rice cake Firstly, we need to prepare a sponge cake, then make the mousse filling, and subsequently assemble the sponge cake with the mousse. Finally, decorate the top of the cake. Whether making a mousse cake or a cream cake, you need to use a sponge cake as the base. I have tested several sponge cake recipes, and this is my favorite one that I use most often. Making a mousse cake requires gelatin sheets, which are not available in supermarkets. They can be found at bakery supply stores, but they only sell wholesale and not retail.Since I don't consume that much, I had to switch to using QQ jelly beans. I bought pineapple and strawberryflavored ones.Due to the use of QQ jelly beans, less sugar was added when whipping whipping cream. The surface decoration can be freely customized according to your preferences; you can change it as you like. Of course, a strong color contrast will make it more visually appealing.

Banana Mousse cake
Step 1: Prepare the sponge cake
Ingredients:5 egg yolks, 6 egg whites,100 grams of low-flour, 65 grams of salad oil,65 grams of milk, 60 grams of sugar,1 gram of salt, a few drops of malt vinegar. Steps:
1. Separate the egg yolks and whites, placing them in water- and oil-free bowls.
2. Mix the egg yolks well, then add milk and oil, mixing thoroughly.Add sifted low-flour using a spatula to mix gently, creating an egg yolk mixture. 3. Add a few drops of
malt vinegarto the egg whites and beat until stiff peaks form. Gradually add sugar in three parts while beating, until the whites reach firm peak consistency.

4. Take one-third of the beaten whites and fold into the yolk mixture using an up-and-down motion to mix gently, then return all to the remaining whites.5. Mix well until a pale yellow batter forms, pour it into the mold and level it out. Tap lightly on the table a few times to release large bubbles.

Preheat the oven to 170°C, bake for about 40 minutes in the middle layer.

Once baked, turn upside down immediately on a cooling rack until cooled before demolding. Step 2: Prepare the mousse filling Ingredients: 240 ml of milk,2 bananas (medium size),

125 grams of pineapple-flavored QQ jelly beans,
400 grams of whipping cream,
10 grams of sugar.
Steps:

1. Blend 160 ml of milk with the bananas using a blender, then add 80 ml of milk and melted pineapple-flavored QQ jelly beans to it, mixing thoroughly.2. Whisk 400 grams of whipping cream until soft peaks form, adding sugar halfway through for flavor.

Gently fold in the banana mixture and mix well to create the banana mousse filling.
Step 3: Assemble the sponge cake with the mousse
Ingredients:
1 banana (or your choice of fruit). Steps:1. Cut two sponge cake slices about 2 cm thick, trim around them.

Use a larger slice for the bottom and a smaller one for the top. Place the larger slice in the mold first. Pour half of the mousse filling over it and spread evenly.

Add banana slices on top, then place the smaller sponge cake piece. Pour in the remaining mousse filling and level it out. Refrigerate for 1 hour.

2. Melt 50 grams of pineapple-flavored QQ jelly beans with a little water, pour over the surface, and refrigerate overnight.
Step 4: Cake surface decoration mango 1,
8 strawberries (or any fruit you prefer),
100 grams of whipping cream (optional),2 boxes of wafers (only half a box was used in reality),15 grams of strawberry-flavored QQ jelly beans.Steps: 1. Demold the cake by lightly blowing with an electric fan or wrapping it with warm towels.

Remove from the mold and stick wafer sheets around the edges. Arrange

mangoslices on top.
