How to Make Clay Pot Roast

Ingredients:
Mixed pork belly One piece onion Ginger Appropriate amount Fenjia (Sichuan pepper) Appropriate amount Star anise Appropriate amount Two pieces of cinnamon Dark soy sauce Appropriate amount Salt appropriate amount Monosodium glutamate A little
Steps:
1. Cut the pork belly into chunks and blanch it in a pot.
2. Remove the pork from the pot, drain the water, then fry the meat without stopping to remove excess moisture until the surface dries up. Then remove the meat and discard the drained liquid.
3. Heat oil in a pan and add fenjia, star anise, and cinnamon to release their fragrance.
4. Add ice sugar and stir-fry continuously until it melts.
5. Add the pork into the pan and stir-fry evenly.
6. Add sliced onions and ginger, continue stir-frying until the fat in the pork is rendered out. This step requires patience because once the fat is rendered out and then cooked, the pork will not be as greasy when it's done.
7. Add appropriate amounts of salt and dark soy sauce, then pour in sufficient boiling water to cover the meat pieces, skimming off any foam that rises during cooking. Cook until the meat becomes tender and soft, then switch to high heat to reduce the soup and add a little monosodium glutamate for seasoning.
