How to Make Colored Vegetable Hand-Rolled Pasta

Prepare:
spinach 1 small bunch, and radish 1 root,purple cabbage 1/4 head, 450 grams of water,milling flour 750 grams

Method:
1. Prepare the required ingredients.
2. Cut the purple cabbage into small pieces and add to a blender with 150 grams of water, blend into juice, strain through a sieve and set aside.
3. Cut carrot into small pieces and add to a blender with 150 grams of water, blend into juice, strain through a sieve and set aside.
4. Add the spinach to a blender, along with 150 grams of water, blend into juice, strain through a sieve and set aside.
5. Set aside 120 grams of each vegetable juice.
6. Mix 250 grams of flour with purple cabbage juice.

7. Stir with chopsticks to form shreds.
8. Knead into a smooth dough, cover with cling film and let rest for 15 minutes.
9. Roll the dough into thin sheets, dust with dry flour, fold and cut into even strips of noodles.
10. Shake to loosen and prevent sticking.
11-14. The methods for making spinach noodles and carrot noodles are the same as for purple cabbage noodles.
Tip:
If you don't have a kitchen scale, add liquids in small quantities at a time until it doesn't stick. You can also add egg to make egg noodles,or add some whole grain flour to make whole grain noodles. If you have a noodle machine, use it for easier preparation.
If you have a pasta machine, using it will be more convenient.
