Ingredients:Crayfish 400g,Tofu 1 piece,Rice noodles 200g

Seasonings: raw ginger, chopped green onion, salt, oil, cooking wine Steps: 1 Buy crayfish and keep them in slightly oiled clean water for 3-5 days to expel the mud from their intestines

2 Clean the crayfish thoroughly

3 Heat some oil in a pot, add ginger slices, and stir-fry the crayfish lightly; then pour in cooking wine

4 Add an appropriate amount of water

5 Cut the tofu into small pieces and briefly boil it in hot water

6 Bring to a boil over high heat, then reduce to medium-low heat and simmer until the soup is thick and white



7 Drain the tofu and add it to the pot

8 Cook for another 5 minutes or so

9 Add the rice noodles

10 Once the noodles are soft, taste and adjust seasoning with chopped green onion
