How to Make Steamed Mountain Yam in Lu Cuisine
Stir-fry Yam Main ingredients: Yam
Side ingredients: Green Red bell pepper
Seasonings: Salt,Chicken essence,Chicken broth,Sugar, white vinegar, green onion,ginger
Stir-fried Yam Method:
1. Clean and peel the yam, then cut it into slices or strips. Cut the green and red bell peppers, green onions, and ginger into strips.
2. Boil some water in a pot, add the yam and green and red bell pepper strips, boil for a moment, then remove them and cool them down before draining the water and drying them.
3. Pour chicken broth, salt, chicken essence, sugar, white vinegar, chopped green onions, and ginger into a pan to make the sauce.21| 4. Heat some oil in a pot, add the yam slices, green and red bell pepper strips, then pour the prepared sauce, stir-fry until well combined, and serve once cooked.
Characteristics: White, red, and green interwoven, vivid colors, crisp and refreshing texture.
Note:
1. Blanch the yam for 1 minute in boiling water before peeling (the raw yam juice can cause itching on your hands; this issue is resolved by blanching).
2. The yam should be slightly cooked to remove some starch.
Winter Melon Ingredients for Soup: Main ingredient: 500 grams of winter melon,
Pork (lean) 50 grams Seasonings: Soy sauce
10 grams,Monosodium glutamate 2 grams, salt 2 grams, sesame oil 5 grams,Refined pork fat 25 grams, green onion 5 grams 1. Peel and clean the winter melon, removing the seeds, then cut it into 2 cm wide, 3.3 cm long, and 0.7 cm thick slices; slice the lean meat.2. In a soup pot, heat the refined pork fat over medium heat, add minced green onions to stir-fry, then add winter melon, meat slices, an appropriate amount of water, soy sauce, fine salt, cook until the winter melon is tender and soft, skim off any foam, add monosodium glutamate, pour in sesame oil, remove from heat and serve.(Cook) 25 grams of winter melon, 5 grams of scallion.
