  Beef tripe and cow stomachs are not from the same part, but they both belong to the cow's stomach. The functions of beef tripe and cow stomachs are quite different. We can roughly say that:

the cow stomach is a digestive organ for the cow.

beef tripe serves as a storage for food.

Cows place the grass they eat first in their beef tripe, then return it to their mouths at 2 to 3 AM (i.e., ruminating), and only after that swallow it back into their stomachs (not the tripe) for digestion and absorption.

It is more accurate to say that cows swallow grass rather than eat it, only gradually consuming them until 2 to 3 AM.

Cows often ruminate during the day as well.ruminating activities mainly occur at night.
