How to Make Spicy Beef Slices?
Ingredients:
Fine Beef 300 grams, water bamboo slices 40 grams, red dried chili peppers 15 grams,manganese nodule, soy sauce, cooking wine each 10 grams,fine salt 3 grams,rib bones 3 grams,MSG,Szechuan pepper powder each 1 gram, wet starch 30 grams, oil 100 grams.
Steps:
1. Remove any tendons and skin from the beef, then slice it into pieces. Slice the water bamboo slices. Chop the red dried chili peppers finely. Cut the scallions into small pieces.
2. Marinate the beef slices with 1 gram of fine salt and 20 grams of wet starch, then fry them in 40% hot oil until done, remove with a strainer.
3. Heat 50 grams of oil in a wok, stir-fry the water bamboo slices and red dried chili peppers to release their spicy flavor, add the beef slices, cooking wine, soy sauce, fine salt, rib bones, MSG, and scallion pieces; stir-fry until well combined, thicken with wet starch, drizzle with sesame oil, plate up, and sprinkle with Szechuan pepper powder.
