How to Make Pig's Foot Soup
Main ingredients: Fresh pork trotters (500 grams) and salted pork trotters (200 grams)
Seasonings: fresh ginger, a piece, cooking wine, salt, MSG Method:
1. Peel and clean the ginger, then cut it into pieces;
2. Remove hair from the pork trotters, wash them, and slice them; cut the salted pork trotters smaller for easier tenderness;
3. Soak the salted pork trotters in water for two hours, then put them together with fresh pork trotters in a pressure cooker;
4. Initially cook over high heat until boiling, remove foam, add cooking wine, and press for 30 minutes under pressure.If using a regular pot, first bring to a boil over high heat, then simmer for 2 hours on low heat. 5. After the pressure cooker releases steam, open it and adjust the saltiness with additional salt and MSG as needed. If using a clay pot, boil on high heat first, then simmer for 2 hours on low.
4. After the pressure in the pressure cooker has dropped, open and adjust the salt and chicken essence to taste.
