Celery and Lily Bulb Stir-fry Shrimp Balls Preparation
1. Clean the celery and cut it diagonally into diamond shapes; soak the dried lily bulbs, prepare cashews, and remove the shells from fresh shrimp.
2. Heat a wok with cooking oil until five parts hot, then add cashews and fry over low heat until golden brown before removing them to cool naturally.
3. In another wok, add cooking oil and Szechuan pepper; stir-fry it until fragrant, then add celery and stir-fry vigorously.

4. Add the lily bulbs and peeled shrimp into the wok, and season with salt and sugar, stirring evenly.
5. Once the shrimp change color, mix in water and cornstarch to thicken the sauce.

6. Stir again until all ingredients are well coated with the sauce. Add the cashews back into the wok.
7. Add a few drops of Sichuan pepper oil and stir-fry evenly before turning off the heat.

8. Serve in a decorative bowl.
