How to Make Potstickers?
1.Wen chives a bunch. These are the first crop of strong, thick stem Wen chives from the earth.
2. Rinse the wen chives and drain them.
3.Eggs three, beat well.
4. Heat oil in a pan, pour in egg liquid and stir-fry until scrambled.
5. Mix water with a soft dough, let it rest for 15 minutes, then divide into equal-sized portions.
6. Roll out the portions evenly to make dumpling wrappers..
7. Chop the wen chives finely, add a little oil and salt, mix with the stir-fried eggs.
8. Wrap the dumplings. Gently brush the edges of the potstickers with sesame seeds.
9. Place an oiled tray in a steam basket on the gas stove. Arrange the potstickers on the baking tray, set it under the heat reflection grill. Cover and bake.
10. Initially, the fire was too intense,causing some browning around the edges of the potstickers, so I reduced the heat and brushed oil onto them with a brush. Continue to cover and bake on low heat for 20 minutes; the finished potstickers have crispy outer skin and are very fragrant!
I think using a cooked dough would yield even better results! I think using scalded dough would be even better!
