How should chili oil be fried to be fragrant?
Preparation: Prepare high-quality chili powder, pepper powder, sesame seeds,,salt, and the best choice is to add some fried peanuts. Mix them all together in a heat-resistant container.Chili powder should be the main ingredient; other ingredients are added according to taste. Procedure:1. Heat oil until it smokes, then turn off the heat and let it sit for a moment.
2. Gradually pour the hot oil into the prepared chili powder while stirring with a chopstick (tip: place a cloth under the container to prevent movement).
3. The amount of oil should be more than sufficient; after mixing, it should completely cover the chili powder.
The choice of oil is important; generally, use soybean oil or rapeseed oil plus sesame oil for better color in the finished product.
Add seasonings:
Star anise.Clove. Good
ginger.Bay leaf. Cinnamon. A small amount of Sichuan pepper (the quantity depends on personal preference; more if you like it spicy). These seasonings are best ground into a powder and mixed with the chili powder. If not possible, soak them in cold water to allow the flavors to release.Scallions, ginger slices, sesame seeds (preferably hulled), and crushed fried peanuts (crushed peanut kernels).Salt and a little MSG. Now heat oil, add scallions and ginger when the oil is cool.
Use low heat; if seasonings are not ground, soak them along with the chili powder in the oil.)
Once the oil heats up and releases its fragrance (be careful not to overcook), remove the seasonings. Increase the heat to bring the oil to a boil thoroughly. This ensures good flavor from the rapeseed oil. Turn off the heat and let the oil cool to about 60% hot before adding sesame seeds, chili powder, and crushed peanuts. Salt,Monosodium glutamate (MSG) A little.
Now heat the wok: First add peanut oil or rapeseed oil, and while it's still cool, add the scallions and ginger into the pan. Use low heat (it must be low heat). If the seasonings are not ground, add the soaked seasonings together with the oil. When the oil gradually heats up, the ingredients will release their aroma (be careful not to burn them). Remove the ingredients.
Then turn the heat to high and boil the oil until it's thoroughly heated. This ensures a good flavor of the rapeseed oil. Turn off the heat and wait for the oil to cool down to about 60% hot. Add the sesame oil (the amount depends on personal preference; those who don't like the taste can skip this step), chili powder, sesame seeds, and peanuts to complete the preparation.
