When frying sliced eggplant for stir-frying, the oil temperature is typically around 180°C, which results in a significant loss of flavonoids and vitamin P, reducing the health benefits of the eggplant.Eggplants should not have their skin removed when eaten, as the skin contains much higher levels of vitamin P than the flesh does. When eating eggplants, note that old ones, especially those from autumn, contain more solanine, which can be harmful to humans and should be consumed in moderation; reportedly, excessive consumption may cause nausea, vomiting, diarrhea, abdominal pain, confusion, and convulsions.(Note: Flavonoids are good antioxidants, and vitamin P is a good helper to boost immunity.)
