Preserving Homemade Glutinous Rice Wine
Self-fermented glutinous rice wine.Rice. Alcohol.
Place the oxygen generator's gas release stone into the glutinous rice alcohol.
The sterilization time with the oxygen generator should be set to 20 minutes.
After sterilization, portion the glutinous rice alcohol into Canon airtight bags for storage.
Self-fermented glutinous rice wine is purely brewed from grains without preservatives, rich in nutrients but with a short shelf life. Given its characteristics, I adopted two preservation methods to maintain both the taste and nutritional value of the glutinous rice alcohol while extending its shelf life.
First step: Sterilization and disinfection. Sterilize and disinfect the glutinous rice alcohol using an oxygen generator. The oxygen generator produces high-concentration ozone, O3, with strong oxidizing properties that can rapidly kill bacteria in water and air under certain concentrations. It naturally converts back into oxygen, leaving no residue and not causing secondary pollution; it is hailed as "the cleanest oxidant and disinfectant."The bacteria from the container and air are what affect the nutritional content and taste of the glutinous rice alcohol. If not sterilized after brewing, its shelf life will be very short and the quality may deteriorate quickly. Traditional methods involve heating the fermented alcohol to around 85 degrees Celsius for sterilization. However, this method easily causes a loss in aroma and changes in quality. Therefore, I chose more advanced and scientific ozone disinfection techniques that do not cause pollution while preserving the aroma and maintaining the quality of the alcohol.
Second step: Storage in Canon airtight bags. Large amounts of glutinous rice alcohol can be stored full in sterilized bottles. If there are no appropriate bottles or if you need to give the glutinous rice alcohol as a gift, use Canon's airtight bags. Canon's airtight bags are the best because their sealing strips fit tightly. After sealing and storing at room temperature, they completely prevent secondary contamination. For gifts, you can put the glutinous rice alcohol in backpacks or other bags; its sealing strip will not be squeezed open, ensuring safety and peace of mind — no other brand provides this effect. I even tried dropping a bag containing glutinous rice alcohol onto the ground, and it remained unopened! In homes without many bottles for storing the fermented alcohol, I use Canon's airtight bags to solve storage issues.
