Pepper Carrot Kale Anti-Cancer Salad
American scientists say eating more chilies, carrots and cabbage can prevent cancer and protect vision. Because the carotenoids in these vegetables and fruits can activate genes that stimulate cellular communication, which may play a significant role in preventing cancer; loss of carotenoids is likely the main cause of blindness due to macular degeneration among the elderly. The Australian Daily Telegraph cites an AFP report saying that Professor Bertran of the Department of Cell Biology at the University of Hawaii led a research group that disclosed their findings at the 12th International Carotenoids Symposium in Cairns, Queensland on the 20th. There are approximately eighty to one hundred carotenoids found naturally in foods like green leafy vegetables and red-yellow fruits; humans can absorb about thirty of them appropriately.
They discovered that human retinas contain carotenoids; loss of these may cause macular degeneration, leading to blindness among the elderly.
"Cells within organs have a social behavior pattern, exchanging messages through tiny pores in cell membranes," Bertran said.
"When an organ becomes cancerous, this cellular communication function breaks down, and cells start exhibiting autonomous behavior."
