Origin of Japanese Sushi
Sushi is made with rice vinegar as the main ingredient in Japanese cuisine. Legend has it that sushi was originally created to preserve fresh fish. In Japan, fresh raw fish is cut into slices and placed on top of rice, then put on a salted board with stones placed on top; after several weeks, the fermented rice gives the fish an exquisite taste. There are two ways to make sushi. One way is the Kansai style (Kaiseki), originating from the Kansai region around Osaka. The other way is the Edo style, originating from Tokyo's Edomae area.
When you want to try different types of sushi,you can eat a piece of vinegar rice with some pickled ginger to refresh your mouth and better appreciate the fresh fish. Even the same piece of vinegar rice will taste different depending on the order in which you eat it; start with milder flavors, then move to more intense ones.
