Difference Between Vinegar and Acetic Acid
Vinyl acetate Essence The components of vinegar essence are only two, namely acetic acid and water. It is made by mixing edible glacial acetic acid with water. As ice vinegar has a certain corrosive effect on human tissues, the state stipulates that the content of glacial acetic acid in vinegar essence shall not exceed 3%~4%.
Moreover, vinegar essence does not contain nutritional components. It is generally used only as a condiment.

Generally, vinegar contains 2%~5% acetic acid (some aged Molasses vinegar can reach up to 8~10%), as well as lactic acid, glycolic acid, amino acids, succinic acid, sugars, glycerol, aldehyde compounds, inorganic salts, etc.
