How "Fujuechang" Got Its Name
Fujuatang originally had the name Fushouquan. In the twenty-fifth year of Guangxu (1899), an official from the Fujian Bureau of Money hosted a banquet for Governor Zhou Lian.He, to curry favor with Zhou Lian, instructed his wife to be the head chef and use a wine jar from Shaoxing to stew chicken, duck,,pork stomach, quail eggs as well as various sea products and over ten other main and auxiliary ingredients. Zhou Lian tasted it and praised it without ceasing. Later, after Zheng Chunfa learned the cooking method from this official's wife and improved upon it, when Zheng Chunfa opened the "Jucunyuan" restaurant, Fujuatang became a sensation in Fuzhou. In 1965 and 1980, Fujian cuisine, centered on Fujuatang, caused a stir in Guangzhou Nan Yuan and Hong Kong, drawing attention worldwide through the craze for this dish. Restaurants run by overseas Chinese often claim to serve authentic Fujuatang as an attraction.
