Flavor is a subjective perception of food by humans. It includes various sensory experiences such as taste, texture, temperature, and aroma upon ingestion. Taste and aroma refer to the flavors produced after seasoning ingredients are adjusted, including sour, spicy, bitter, sweet, salty, and umami. Texture and temperature sensation mainly relate to the firmness, softness, elasticity, and warmth or coldness of the food. The commonly mentioned flavor mainly refers to the combined perception of taste, aroma, and texture.

Since flavor is a sensory experience, people's preference for it often carries strong personal, ethnic, regional characteristics, which are closely related to local climate, resources, customs, physiological functions, etc. This explains why some people have difficulty adapting to dishes from other regions.

Flavor is typically manifested by flavor compounds, which are mostly non-nutritive substances (except for a few) and can be complex in composition with low concentrations that are easily damaged, especially during cooking processes.

Although these flavor compounds do not provide nutrition themselves, they stimulate appetite, increase food intake, promote the secretion of digestive juices, and enhance intestinal peristalsis, thereby indirectly benefiting digestion and absorption. Therefore, good flavor is an important indicator in assessing food quality and often reflects the chef's skill. It should be paid attention to during cooking.
