How to Make Sago Silver Ear Soup

Method:
1. Place water in a pot and bring to a boil over high heat. Add the large tapioca pearls into the boiling water and stir with a chopstick. When the water becomes cloudy, remove the large tapioca pearls from the pot, then replace the water and bring it to a boil again, adding the large tapioca pearls. Stop when six-tenths of the center of the large tapioca pearls are still white, then turn off the heat and let them cool naturally. If there is no white heart in the large tapioca pearls, rinse them repeatedly with cold water until they are cooled, then pour into a colander to drain the water.
2. Soak the silver ear fungus in cold water until it softens, remove any impurities, and re-soak it in warm water before placing it in a pot for slow cooking over low heat.Burn until fully softened and tender.
3. Place a large bowl of water in the pot along with the silver ear fungus,brown sugar, add the sugar osmanthus flowers, stir until well mixed to complete the dish.
