Dried bamboo shoots are very hard and are difficult to soften even with regular soaking methods. Below are two methods:
1. First, put the dried bamboo shoots in a iron pot, fill it with water, and boil for 30 minutes, then simmer on low heat for a while, remove the old roots, wash them, and soak in rice washing water before use.
2. Soak the dried bamboo shoots in cold water until they soften, then slice them thinly. Place them in boiling water with a little alkali, soak for about 5 minutes, remove and rinse thoroughly in clean water, then you can cook them with other ingredients.
