How to Make Black Sesame Wife Cookies?
Ingredients
Water-oil skin: 100g medium flour, 15g fine sugar, 45ml water, 10ml (I used 10g) whole egg liquid Lard 50g
Oil paste: 80g medium flour, 50g lard
Rice vermicelli Filling:Glutinous rice Rice powder 70g sugar, 110ml water, cooked Black sesame seeds 30g lard
Egg wash for decoration: whole egg liquid, white sesame seeds
Baking: top layer at 160°C for 15 minutes (middle layer at 200°C)
Steps
1. Make the glutinous rice filling
Water,sugar, and lard are added to a pot and brought to a boil over high heat, then reduced to low heat.
2. Immediately pour in all the glutinous rice flour and stir quickly until it forms a thick paste. Turn off the heat.
3. Add cooked black sesame seeds and mix well. Spread on a plate and refrigerate for one hour until the filling is not sticky.
4. Divide the chilled filling into 16 portions, roll them into balls, and set aside.(While the filling is in the refrigerator, make the water-oil skin)

Take flour, sugar, whole egg liquid, lard, and water and mix them until a smooth, soft dough forms (adjust the amount of water as needed). The dough should not be too dry.
3. Next, make the oil paste by mixing flour and lard and kneading it into a ball continuously.
4. Divide the water-oil skin dough into 16 portions and roll them into balls, then cover with cling film for later use.
5. Also divide the oil paste into 16 portions and roll them into balls, setting them aside for half an hour.

3. Make the buns Rice skin Take a piece of water-oil skin dough and flatten it to place an oil paste ball inside. Gradually seal the edges with your fingers.

9. Rotate 90 degrees, then roll again into an oval shape

10. Roll up from top to bottom and let it rest for 15 minutes.
11. Roll the rested dough skin into a circle, place the glutinous rice filling in the center, and wrap it up.
12. Seal tightly, with the seam facing down
13. Press out to form a round bun shape, place on a baking tray, brush with egg wash.

14. Make three cuts on the surface of the bun, just breaking through the skin.
15. Sprinkle with some white sesame seeds
16. Bake in preheated
oven until golden brown. Bake at 160°C for 15 minutes and remove from the oven. Bake for 15 minutes at upper rack 160 degrees.
