Rice cake main ingredients: 8 ounces (about 300 grams) of water chestnuts, 2/3 cup of coconut milk, 3/4 cup of sugar, 1/4 cup of sweetened condensed milk, 7 ounces (about 280 grams) of tapioca starch, 3 and a half cups of water, 1 tablespoon of cooking oil.
Steps: 1. Wash the water chestnuts, peel them, and crush them.2. Mix the starch slurry with one and a half cups of water to make a batter, divide it into two portions, set aside for later use.3. Boil two cups of water to dissolve the sugar, add coconut milk and cream, simmer on low heat, slowly pour in one portion of the batter while stirring rapidly until it becomes a thin paste, remove from heat, mix in the crushed water chestnuts, then add the remaining batter, stir well, pour into an oiled cake mold.Steam for forty minutes. Remove and let it cool before serving.
Note: After dissolving the sugar with water, add coconut milk and cream, then slowly add the starch slurry to avoid uniform coloring upon steaming, which would affect the appearance.
