How to Make Pancake Rolls?
It is made from green bean mashed into a pancake, and then stuffed with crispy "guo bi", or thin-crisp "guo biti", such as oil floss (oil strips), along with sweet bean sauce, fermented tofu, chopped green onions, hot chili sauce, etc., as condiments. The crispy "guo bi", which we call here oil-fried thin-crisp pancake, is placed inthe pancake and eaten with a crispy and crunchy texture that makes a cracking sound when bitten, paired with the softness of the pancake exterior, making it very satisfying! First make the crisp.

Put salt, baking soda, baking powder, and warm water together, stirring until the salt dissolves. Step 2. Add flour and cooking oil, mixing with a chopstick to form clumps.
Step 3. Rinse the dough into a smooth surface, cover with a damp cloth, and let it rest for about half an hour.
Step 4. Apply oil on the workbench, roll out the dough into a rectangular thin sheet, then fold from both sides to the middle.
Step 5. Fold like folding a quilt.
Step 6. Once folded, wrap with plastic wrap and refrigerate for 2 hours or overnight.
Step 7. Ripen the dough from the refrigerator and roughly knead to smooth. Cut it in half along the middle.
Step 8. Take one piece of dough, roll out into a thin rectangular sheet, cut vertically into three sections, then slice each section horizontally (only between the lines, do not cut the edges).
Step 9. Heat oil in a pan to about 8-9 tenths full. Place the dough by holding one piece and dipping two-thirds down, lift out, and repeat twice more until fully submerged.
Step 10. Fry on medium heat until golden brown on both sides. Drain excess oil after cooking.
Step 11. Mash red fermented tofu with half a tablespoon of water in a bowl, then add garlic chive fermented black bean sauce and sweet bean sauce, mix well. Those who like spicy can add some
chili sauce.
Step 12. Clean the coriander, green onions, and lettuce thoroughly, chop the coriander into pieces, fry the white sesame seeds without oil in a pan on low heat until fragrant. Slice the ham into strips. Step 13.
Mix together green bean flour andmillet
flour and five-spice powder, add an egg, slowly pour in warm water or broth, mix to form a batter that can drip down in thick threads when scooped with a spoon. The thinner the batter, the thinner the pancake. Step 14. Heat a flat pan over low heat, brush it lightly with oil. Step 15.Pour in one large portion of batter and rotate the pot to spread the batter evenly on the bottom. Step 16.
Once the batter is set, crack an egg into the pancake. Step 17.
Using a spatula, spread the egg whites and yolks evenly across the surface of the pancake. Step 18.Sprinkle some chopped coriander, green onions, sesame seeds. Step 19. When the egg liquid is about to set, flip it over with a spatula. Spread sauce on one side of the pancake.
Step 20.Place crispy and lettuce in the middle of the pancake, then fold both sides towards the center using a spatula to serve. Heat and then switch to low heat, brush a thin layer of oil.
18. Scoop in a large spoonful of batter, holding the handle of the wok while spinning it to spread the batter evenly on the bottom.
19. Once the batter is set, crack an egg into the pan.

22. When the egg liquid is almost set, use a spatula to flip it over. Brush a layer of sauce on the pancake.
23. Place crispy strips, lettuce, and ham slices in the center of the pancake sequentially.
24. Fold both sides towards the center with a spatula and serve.
