Dough ingredients:All-purpose flour 300 grams, warm water 160 grams, yeast 4 grams, alkali water as needed (about 60 grams per bun, about 8 to 9 buns)

Filling:Black sesame seeds 100 grams, fatty oil 40 grams,Sugar 30 grams

Steps:

I. Make the filling:

1. Roast black sesame seeds over low heat until they are fragrant, then crush them with a rolling pin.

2. Add fatty oil and sugar, mix well to form the filling.

II. Prepare the dough:

1. Dissolve yeast in warm water (below 60 degrees Celsius).

2. Place flour in a bowl, slowly pour the yeast-infused water while stirring with a chopstick in one direction until it forms large flakes of dough; then knead into a smooth dough. Cover the bowl with a wet cloth and place it in a preheated oven set to 30 degrees Celsius, with a pan filled with water on the lower rack for steam.Oven Place a basin of water on the lower layer of the oven for fermentation.

3. Once the dough has doubled in size (a finger press leaves no imprint), remove and add an appropriate amount of alkali water (not necessary if you don't want to use it; adding alkali water makes the bread taste more fragrant, but do not add all at once, you can sprinkle a little on your hands and knead). Knead until smooth.

4. Roll the dough into a long strip and cut it into pieces of about 50 grams each.

5. Flatten each piece with a rolling pin to form a tongue-like shape. Brush one side with fatty oil, then evenly sprinkle a thin layer of flour (for better layers in the final product).Tongue Gently brush the surface with lard first, then evenly sprinkle a thin layer of flour (for layering in the finished product).

6. Fold the dough from far to near into a long strip.

7. Fold both ends towards the center to form three layers each.

8. Press down and roll out into a circle.

9. Stuff with sesame filling, seal the edges like you would for a bun; place seam side down, cover with a wet cloth and let rest for 20 minutes.Bun Seal the edges by folding them over, place seam side down, and cover with a damp cloth for 20 minutes.

10. Flatten the dough and brush one side with water. Pick up and press into a plate of sesame seeds, pressing to adhere.

11. Heat a flat pan over low heat, brush a thin layer of oil on the bottom, place the bun seam-side down, cover with a lid. Once the bun has risen and the sesame side is golden brown, flip it and bake until both sides are golden.
