How to Make Lotus Seed and Pine Nut Corn Salad

Ingredients:
Lotus seeds 40 sweet ones,Corn kernels from half a can,Pecans(I used raw and shelled myself), 70 grams (more is better for taste),Cucumber 50 grams,Goji berries 30 pieces, scallion flowers 10 grams, 40 grams of cooking oil,Sugar 20 grams, salt to taste, aromatic powder to taste, a little water and starch
Steps:
1. Soak the lotus seeds in cold water for more than an hour until soft, then boil them until cooked (a few minutes), drain and cool with cold water, set aside;
2. Rinse the sweet corn under running water and pat dry,
3. Remove the shells and inner skins from the pecans; use shelled ones if preferred, but I find raw ones better.
5. Soak the goji berries in cold water until soft, then drain;
6. Cut the cucumber into small cubes (preferably replace with green peas for better shape and color),Green peas,
7. Heat a pan and add a little oil to coat the bottom, then add the pecans and fry over low heat until lightly toasted, remove and set aside;
8. Add the remaining cooking oil to the pan, sauté the scallion flowers, corn kernels, lotus seeds, cucumber, and goji berries over high heat.
9. Add the fried pecans, salt, aromatic powder, sugar, and stir-fry until well combined;
10. Pour in a small amount of water and starch, stir to combine, then cook until thickened before serving.
