A single potato can have 100 ways to be enjoyed; today, this big potato is being cold-mixed!
Potatoes cost 1.2 yuan per jin, so I picked a medium-sized one for just 6 fen, plus the cost of seasonings totals around 1 yuan... It's both economical and satisfying...

Ingredients: potatoes
Seasonings:vinegarsoy sauce, sugar, salt,chili powder, five-spice powder, garlic, roasted sesame seeds,,cumin, and mature sesame oil.Cold mixed potato slices Preparation method
1. Peel the big potato, wash it clean, then cut it into evenly thick strands. 2. Rinse the potato strips several times with water to remove the surface starch and soak them in water.
3. Boil some water in a pot; add the soaked potato strips and cook until they are just tender.



4. Remove the cooked potato strips, rinse them under cold water, then transfer them to icy cold white boiled water to cool completely before draining.
5. Mix vinegar, soy sauce, sugar, salt, chili powder, five-spice powder, garlic, roasted sesame seeds,, cumin oil, and mature sesame oil as the dressing; pour it over the potato strips and toss them together.
Step 3 is particularly important; cold mixed potato slices should be enjoyed with a crunchy texture. Do not overcook until they become soft; remove from heat when they are just done.
Mix vinegar, soy sauce, sugar, salt, red pepper powder, five-spice powder, garlic, roasted sesame seeds, green onion flakes, Sichuan pepper oil, and sesame oil to make a dressing. Pour it over the potato strips and mix well.



PS:
Be particularly careful in step 3; cold stir-fried potato strips should have a crispy texture, so do not overcook them until they become soft. Remove from heat when just cooked through.
