Ingredients:
North Tofu 1 block 50g meat filling Mushroom 4 pieces Winter Bamboo Shoot 100g Onion Ginger Garlic each 10g
Seasonings: Shaoxing wine 1 teaspoon (5ml) Doubanjiang sauce 2 tablespoons (30g)Soy Sauce 1 teaspoon (5ml)Rice Vinegar 1 teaspoon (5ml) Sugar 1/2 teaspoon (3g) Water 200ml Cornstarch 3 tablespoons (45ml)
Method:
1) Soak mushrooms in warm water at 40 degrees for softening. Marinate meat filling with Shaoxing wine for 10 minutes. Cut tofu into 2cm thick triangular slices (square shapes are also fine).
2) Slice winter bamboo shoots, blanch them in slightly salty water for 20 seconds and then drain. Chop onions, ginger, and garlic into small pieces. Slice mushrooms.
3) Heat a pot with oil. When the oil is heated to 70% hot, switch to medium heat and fry tofu until both sides are golden brown.
4) Add more oil if needed when the oil heats up to 40% hot. Stir-fry onion, ginger, and garlic pieces until fragrant, then add Doubanjiang sauce and stir-fry until red oil is produced. Finally, add meat filling and stir-fry evenly.
5) Place fried tofu, blanched winter bamboo shoots, mushroom slices in the pot. Season with soy sauce, vinegar, sugar, and water. Bring to a boil, then simmer for 3 minutes before adding cornstarch slurry to thicken the sauce.

This dish is delicious but not visually appealing; it can be called an unattractive yet tasty side dish. A poorly looking simple side dish, this description might be appropriate.

If you are going to stir-fry the tofu without frying it first, soak it in slightly salty water for half an hour beforehand to increase its resilience; this will prevent it from breaking easily when stir-fried.

Doubanjiang sauce is already salty, so no additional salt is needed. Adjust the seasoning according to your taste; you may add more salt if desired but test the flavor first.
