Ingredients:
1 Main ingredients:Chinese Crucian Carp 2 pieces.
2 Seasonings:Peanuts Sufficient oil, sufficient salt, 1 onion,Garlic Sufficient amount, ginger Sufficient amount, chopped garlic and ginger, cooking wine Sufficient amount, light soy sauce Sufficient amount, dark soy sauce a little bit, Oyster sauce a little bit,sugar a little bit, water sufficient, Coriander

Preparation:
1 Remove the black membrane and intestines of the carp, cut off the pectoral fins, pat dry with paper towels and set aside.
2 Make several cuts on both sides of the fish, season the fish body with salt and cooking wine.3 Chop the garlic and ginger into small pieces. Mix soy sauce , oyster sauce, sugar, vinegar
and a bit more water to make a seasoning sauce.
4 Heat the wok or large pan, add more oil than usual for stir-frying, and fry the fish until both sides are golden brown.
5 In another pan, heat a little oil, then sauté the chopped onion and ginger.
6 Add the fried fish to this pan, pour in the prepared seasoning sauce. Add enough water to cover the fish by one bowl.
