How to Make Home-style Braised Shark Fin
Ingredients:
Dried fish, salt,Szechuan pepper powder, mash, rice wine, green onion ginger minced,soy sauce a little bit, cornstarch enough,egg white, oil,vinegar,soy sauce,,sugar, water,chicken essence
Steps:
1. Remove the head, tail tip, and internal organs from the dried fish... wash and cut into pieces.
2. Marinate the prepared dried fish with salt, chicken essence, Szechuan pepper powder, rice wine, green onion and ginger minced, a little bit of soy sauce for 20 minutes.
3. Mix an egg white and enough cornstarch with the marinated dried fish (do not wash off the marinade used).
4. Deep-fry the coated dried fish in hot oil at about seven-tenths heat until slightly hard on the outside, golden brown, then remove and drain the oil.
5. In a small amount of remaining oil, fry Szechuan pepper and star anise to release their aroma, add green onion pieces, ginger slices, garlic, vinegar, sugar, soy sauce, rice wine, salt, water, bring to a boil, then add the fried dried fish segments and simmer until the sauce thickens.
