Authentic White Cut Chicken Recipe

Seasonings: wine (sake, cooking wine, or Guangdong rice wine can be used), fresh ginger, green onions, garlic, oil, salt.
Process:
1: In a large pot, bring water to a boil with 2-3 slices of ginger;
2: After the water boils, place the washed chicken in it and add one spoon of wine. Note that the water must cover the entire chicken.
3: Once the water comes back to a boil, reduce heat to a gentle simmer until there is only slight bubbling. Let it steam for 10 minutes;
4: Turn the chicken over and drain the water from the chicken's cavity into the large pot. Steam for another 10 minutes;
5: Turn off the heat. Continue to cover the pot tightly for 10-15 minutes.
6: While steaming, prepare the ginger paste, green onion paste, and garlic paste. Mix the pastes with an appropriate amount of salt in a small bowl. Heat oil and pour it over the mixture to make dipping sauce.
7: Prepare another large pot filled with cold water (ice is preferable). Quickly transfer the chicken from the hot steaming pot into the cold water pot. Keep cooling for about 15 minutes. During this time, continuously replenish cold water if necessary. Tap water can be used directly. Do not use water to directly spray on the chicken body.
8: Place on a cutting board and cut!
9: Serve with the prepared dipping sauce.
