Add the fatty meat strips and stir-fry until they release their oil; then add the lean meat strips and continue stir-frying until the meat turns color, adding soysauce to further color the meat strips before removing them. Return the original pot to heat and add some more cooking oil, add chives, salt, and sugar, quickly stir-fry for a few seconds, then pour in the meat strips and combine thoroughly.
