How to Cook Pan-Seared Beef Liver?
Ingredients: small liver 4 pieces (each 100g), small onion 2 pieces (sliced into rings), red apple 200g (diced),olive oil 2 tablespoons (30ml),chicken stock 100ml, sage 1 teaspoon (5g) (finely chopped), salt 1/2 teaspoon (3g),white pepper powder 1/3 teaspoon (2g)
Steps
1. Season the liver with salt and white pepper.
2. Heat a pot over medium heat, add olive oil until hot, then place the liver in the pot, frying for 2 minutes on each side. Transfer to a plate after cooking.
3. In the same pot, using the remaining oil, fry the small onion rings and red apple pieces with sage until fragrant, about 5 minutes. Add chicken stock, reduce heat and simmer for another 3 minutes. Reduce the sauce and pour the cooked vegetable mixture over the liver.
Tip: This dish pairs well with Swiss potatopancakes for enhanced taste.
