In the south, they still don't hold a significant market share.Cantonese cuisine and Sichuan cuisine take up much of the market. Many Cantonese and Sichuan chefs look down on Northeastern cuisine.Among the eight major Chinese culinary traditions, Northeastern cuisine seems to have struggled for a place. Due to geographical factors, Northeastern cuisine is known for its aromatic richness and slightly salty taste, with meat dishes being predominant. In today's health-conscious society, it isn't very popular. Moreover, in terms of presentation, it doesn't measure up to Cantonese cuisine. But I like it because I am a chef myself.
