Tips to Cook Eggplant Without Using Oil
Eggplant is a common food in our daily life, but when stir-frying eggplant it can be greasy, which is a bother when eaten. Now, I will introduce two methods to stir-fry eggplant without using much oil:
(One)
1 First, mix the sliced eggplant with salt and marinate for 15 minutes, then squeeze out any excess water.
2 When stir-frying, do not add water. Stir-fry until the eggplant is soft, then add various seasonings. This way, it will be both oil-saving and tasty.
Additionally, the color of sliced eggplant can easily turn black after being cut; soaking in clear water or salty water for a while before stir-frying can prevent this from happening.
(Two)
1 Mix one spoon of starch with a large bowl of water to make thin starch water.
2 Soak the sliced eggplant in the starch water and use it immediately.
3 First, deep fry the eggplant over high heat until golden. Then switch to medium heat quickly to avoid burning the outside while keeping the inside soft.
