Dry vs Wet Fried River Beef Differences
The difference: dry stir-fried rice noodles have no sauce when served, while wet stir-fried rice noodles have plenty of sauce and are smoother to eat!
Main ingredients for dry stir-fried beef noodles:Rice noodles, also known as Shahe noodles, originate from the Shahe Town in Guangzhou. The usual cooking methods include simmering or stir-frying. Stir-frying can be divided into adding oyster sauce (wet) and not adding it (dry). For dry stir-fried beef noodles, first quickly fry tender beef to half-done. Then add oil to sauté the Chinese cabbage and onion, quickly stir-fry with rice noodles, adding soy sauce and cooked oil, then add beef and mix well. Dry stir-fried beef noodles require "wok aroma," which demands quick and vigorous cooking over high heat. While mixing evenly, the hand movement must not be too fast to avoid breaking the noodles. The amount of oil also needs precise control; otherwise, the dish will become greasy and unappetizing. Therefore, dry stir-fried beef noodles are considered a major test for Guangdong chefs' cooking skills, with skill level easily discernible from the result.
Wet stir-fried beef noodles:
Ingredients:
Rice noodles 200 grams, beef top sirloin slices 100 grams, green onions 2 stalks, Napa cabbage a little, red radish a little.Salt 1/2 teaspoon, soy sauce 1/2 tablespoon, cornstarch 1/2 tablespoon, sesame oil a little. Cooking method:
1. Marinate beef slices with soy sauce and cornstarch for 10 minutes.
2. Cut Napa cabbage, red radish, and green onions into threads.
3. Heat rice noodles in hot oil in a wok, add 2 tablespoons of oil, quickly stir-fry beef slices until they change color, then add vegetable threads to mix well, followed by adding rice noodles, reduce heat slightly for the noodles to soften, add a little sesame oil, and serve.
Note:1. Beef slices can be replaced with pork
slices.
2. The soup for wet stir-fried beef noodles follows the same steps; just pour in boiling
stock with rice noodles, and cook over high heat until it boils once before serving. Slices are also acceptable.
2. The method for making river rice noodle soup is the same as above, just add the river rice noodles while pouring in boiling broth,and cook over high heat for one boil before removing from heat. Then serve.
