How to Make Stinky Tofu Hand Soup?
Ingredients:
Pig's foot 1000 grams, stinky Tofu 8 pieces ( , ). Seasonings Star anise and cinnamon each 5 grams, 700 grams of salad oil,Fine salt 5 grams,Monosodium glutamate 3 grams,Ginger and garlic cloves each 5 grams,Sugar 120 grams, sauce 15 grams,Chicken essence 5 grams, Sichuan pepper 3 grams,Broth 1000 grams, dried Red peppers 3 grams, Mei Ji soy sauce 5 grams.
Procedure:1 First, clean and dehair the pig's foot, cut it into two halves, then slice each half into pieces measuring 6 cm long by 5 cm wide, boil for 2 minutes, set aside. The sugar should be simmered in warm oil until a golden color is achieved.
2 In a wok over medium heat, add 100 grams of salad oil and heat to about 300°F (150°C). Add star anise, cinnamon, ginger, garlic cloves, and sauce, stir-fry for the aroma. Then pour in broth, add the sugar color, Sichuan pepper powder, fine salt, MSG, Mei Ji soy sauce, and chicken essence, simmer until well mixed.
3 Transfer the seasoned broth into a sandpot, place the pig's foot inside, put on medium heat to bring to a boil. Reduce to low heat for about 1 hour until the pig's foot is red and tender.28 Burn over high heat then switch to low heat simmering for approximately 1 hour until the pig's foot turns red and becomes tender. At the same time, fry the stinky tofu in a wok of hot oil (about 350°F/175°C) for 3 minutes.
4 In another wok with 50 grams of salad oil, heat to about 325°F (165°C), add garlic cloves and dried red peppers, stir-fry until fragrant. Add the braised pig's foot and fried stinky tofu into the wok, mix well, then transfer to a sandpot.Bowl and serve.
Characteristics
The pig's foot is bright red in color, delicious without being greasy, the stinky tofu is crispy on the outside and tender on the inside.
