How to Make Sautéed Soft Tofu in Fish Flavor

1. Heat oil in a pan and stir-fry pork mince over low heat.
2. When the
meat releases its fat, add ginger, garlic, green onion, chopped pickled peppers. 3. Add water or
chicken stock half a cup. 4. Add all seasoning and cubed tofu.
5. Bring to a boil over medium heat, then reduce to low heat and cook until the sauce is almost dry.
6. Add water starch when the sauce has thickened. Sprinkle with green onion before serving.
Tips:
1. Southern soft tofu tastes better than
northern firm tofu , also easier to absorb flavors. 2. The saltiness from pickled peppers is enough, so no need to add much salt.
3. When making the tofu, try not to stir too much; move the pot gently instead to ensure even distribution of seasonings without breaking the tofu.
