How to Make Five-Spice Pork with Dried Bamboo Shoots

Steps for stewing pork belly with dried bamboo shoots:
1. Wash the pork belly and cut it into small cubes;Soak the dried bamboo shoots in cold water for more than one hour.
2. Heat up a wok with oil, first stir-fry the pork belly, adding a little soy sauce and two pieces of rock sugar, frying until the meat turns golden brown. Then add the drained bamboo shoots and stir-fry together for five to eight minutes.
3. Pour one large bowl of water into the pot, making sure the liquid level is about a third above the ingredients;Bring the soup to a boil, then reduce heat and cover and simmer for about forty minutes.
4. When the soup is nearly reduced, add an appropriate amount of coarse salt, switch to high heat, stir continuously until the sauce thickens.
5. Just before the juice dries up, pour in a little more soy sauce for coloration, then it can be removed from the pot.
Directions for preparing dried bamboo shoots:
(1) Shelling and washing: Use a knife to slit the bamboo shoot's shell on both sides, peel off the shell, remove the non-edible old parts of the bamboo shoot, and cut it into 2-4 segments lengthwise. Then rinse thoroughly.Bamboo shoot(2) Shaping: Cut the washed bamboo shoots horizontally into thin slices about 3 millimeters thick, then slice them vertically into small pieces about 1.5 to 2 centimeters long.(3) Steaming/Cooking: Steam the cut bamboo shoot slices for 1.5 hours and take them out of the steamer.⑶Pay attention to the fire when cooking bamboo shoots; if too soft, they will turn red; if not cooked through, they will turn black and spoil.(4) Drying: Spread the steamed dried bamboo shoots on bamboo mats to dry under the sun. Once hand-tightened, it is considered dry. Generally, 100 kilograms of unshelled fresh bamboo shoots can yield 15-16 kilograms of dried bamboo shoots. When cooking the bamboo shoots, pay attention to the heat; if overcooked, they will turn red; if undercooked, they may turn black and moldy.⑷ Sun-drying: After removing from the steamer, spread the dried bamboo shoots on bamboo mats for sun-drying. They are considered ready when you can easily break them by hand, typically yielding 15-16 kilograms of dried bamboo shoots per 100 kilograms of shell-less fresh bamboo shoots.
