Place the roll of mung bean skin in the refrigerator's chill compartment until it becomes icy. Remove, peel off the outer layer, cut into small rolls on a clean cutting board with a knife, and place them on a dish.coriander chop scallions finely and place them on top of the mung bean skin.chop both ends of the garlic into a paste, put it in a small bowl, add salt, sugar, sesame oil,vinegar,soy sauce and old dried chile sauce, mix into a dressing and pour over the mung bean skin, then stir well to serve. It is crisp and cool, tangy and spicy.
