How to Make Flavor Sauce Beef Tripe in Xiang Cuisine?
Main ingredients:Fatty beef 200 grams, 4 pieces of large onion,Ginger slices 2 pieces, dried chili peppers 3-5 pieces, finely chopped green onions and ginger, 1 tablespoon of cooking wine.
Flavor sauce: 1 tablespoon of oyster sauce,soy sauce 1 tablespoon,sugar 1 teaspoon,maltose vinegar 1 teaspoon.
Steps:
1. Cut the fatty beef according to your preference, with a mix of fat and lean meat or more lean meat.
2. In a pot, add water, onion pieces, ginger slices, and cooking wine; bring to a boil.
3. Once the beef turns white, remove it from the pot and drain the water; place in a container.
4. In another pot, add about 1 tablespoon of oil, then stir-fry the green onion and ginger pieces with chili peppers at the bottom of the pot until fragrant.
5. Add oyster sauce, soy sauce, sugar, vinegar, and turn off the heat to mix well. Pour over the beef, mix well, and serve hot.
Tips:
1. In cold winter, you can first make the flavor sauce then blanch the beef; this avoids cooling too quickly which affects taste. Serve while still hot.
2. High heat will destroy the freshness of oyster sauce; thus, turn off the heat immediately after adding all other seasonings. You can also mix the sauce in a bowl and then pour it into the pot.
3. Do not overcook the beef; it will ruin the texture; cook until white and remove quickly.
