The ingredients are fresh osmanthus flowers (if dried, soak them first), a little salt, sugar to taste, and water for dissolving the salt and sugar. Chop the osmanthus flowers finely, heat the sugar and water until fully dissolved over medium-high heat. When large bubbles appear, add the salt; when small bubbles start appearing, add the osmanthus flowers, then reduce heat and simmer until it becomes a syrup. If not cooked long enough, it will be too thin and can be re-cooked or thicken with a little maltose. If overcooked, it will become too hard and can be diluted with water. Traditional osmanthus sauce is sweet with a hint of salt, but excessive sugar and salt can mask the floral aroma.
