How to Make Puff Pastry Éclairs?
Puff Pastry Cream Puffs are made from the following ingredients:
Main Ingredients:Rice Noodles(Strong Flour) 286 grams,WheatFlour 202 grams
Auxiliary Ingredients:Butter 100 grams,Milk 100 grams,Eggs 150 grams, 208 grams of clarified butter
Seasoning: Sugar 13 grams,Pork Fat (Clarified) 26 grams Baking:
Strong flour and
1. Low flour are used to make the puff pastry; Low flour is then kneaded with the dough and shaped into a rectangular puff pastry sheet, resting for 30 minutes;Cut the puff pastry into approximately 8x8 cm squares, making about 30 pieces in total for use. In a pot, melt the butter and milk together until boiling;
Add low flour (150 grams) to the pot and stir until it thickens and no longer sticks to the bottom of the pan;
Gradually add the eggs while stirring continuously to form the cream puff batter;
Transfer the cream puff batter into a piping bag, and using about 20 grams of the batter per piece, pipe onto each square puff pastry.
Fold the four corners inward until all 30 pieces are used up, then place them in the oven.
Bake at 180°C for approximately 30 minutes.

To prepare the puff pastry: Knead and shape the dough into a round form, let it rest, use a rolling pin to roll out the dough into a rectangular sheet, adjust the thickness so that the center is about four times thicker than the corners, place the butter in the center of the dough, shaping it so there are two layers of pastry with one layer of butter at the center.Food Complement Tips: Eggs: Consuming them with
