Homemade Congee with Various Grains and Chicken Recipe

Steps

1. Remove the rooster's internal organs, head, and tail part without slicing too much; clean it thoroughly and place it in a large container.(To remove blood water).2. Mix the job's tears, rice, and black rice together, 3. Rinse them then soak for 1 hour. Ginseng roots, raisins, and goji berries should be washed as well.

4. Drain the mixed grains of their water.5. Discard the soaking liquid for the rooster; clean it both inside and out thoroughly.

6. Fill with the soaked grains up to 80%.

7. Insert one ginseng root.8. Place several raisins and a few goji berries in as well.

9. Seal the opening with toothpicks.

10. Place the rooster into a soup pot.

11. Pour in enough water to cover the chicken.

12. Bring it to a boil, then remove the scum with a ladle.

13. Add ginger slices.14. Add remaining raisins. 15. Add goji berries.

16. Place back in the ginseng root.

17. Cover the pot and cook on low heat for 1.5 hours.

Tip

1. It is recommended to use a young rooster for this soup as its meat is fresher and more tender, making it easier to stew.

2. Ginseng used in this soup is milder compared to other options.

Ginseng can be purchased from pharmacies or markets that sell soups.
3. Raisins should be torn open before adding to the pot for better nutrition extraction.
4. The type of grains can vary according to personal preference; glutinous rice adds a certain thickness and richness to the broth.
5. Black rice water may turn black, but it is a clear reddish-black color rather than an ink-like shade. If the water turns very dark after soaking black rice, it might be dyed and not normal. This mixed grain ginseng chicken soup can be consumed in its entirety: the meat, broth, and grains are all nutritious components of your meal.
6. Accompanied by stir-fried or cold-cubed vegetables would make for a complete and nutritious main meal.

During soaking, the water will turn black with the brown-black color of the black rice.
