Complete Guide to Braised Chicken Recipes

  General cooking method

Ingredients:

One chicken, scallions,Ginger, one tablespoon of Shao Xing wine, a bay leaf, salt, large dates, goji berries, pumpkin.

Instructions: 1. First, process the purchased chicken, gut and skin it, remove the internal organs, and cut into small pieces.

2. Boil some water, don't boil it, just heat it up, pour it into the pot for cooking chicken, remove the surface dirt of the chicken, drain the water.

3. Marinate the chicken pieces with scallions, ginger, and one tablespoon of Shao Xing wine to remove the fishy smell.

4. Place the marinated chicken pieces in a pot, add water to cover the chicken pieces, and add a bay leaf (one is enough, too much can make the aroma overpower the chicken's own flavor) over medium heat cook, at this time, don't be afraid of being troublesome, be sure to use a spoon to remove the foam on the surface of the soup, so that the chicken's taste will be better.

5. Turn the heat to low, simmer until the meat is tender, it takes about two hours, if using a pressure cooker, it will be faster, but the taste is not as good as slow cooking in a pot.

6. Finally, add salt and simmer for a while, adding salt at the end will make the meat harder.

7. While I'm simmering the chicken halfway through, I added some dates and goji berries, and when the chicken is almost cooked, I suddenly thought of the pot of steaming pumpkin, so I cut the steamed pumpkin into pieces and put it into the chicken soup and simmer for a few more minutes.

When eating, there is no pumpkin flavor in the chicken soup, but the pumpkin has the fragrance of chicken, which is a lucky coincidence.

This is a recipe I came up with myself, I don't know if it's authentic clear chicken soup cooking method, but the taste is still good, my grandmother also thinks it's good, but no matter how you cook it, slow cooking chicken is a slow and steady work.
