Prepare ingredients

6. Add water to cover the meat, stir-fry for a few minutes

7. Add carrots, stir-fry for one or two minutes

8. Stir-fry mushrooms until well mixed, cover and simmer briefly

9. Season with salt based on taste; more is needed due to sweet bean sauce, less if using fermented black beans; adjust according to preference

10. Add onions when the liquid has reduced enough; reduce cooking time for firmer carrots 11. When it's almost cooked and seasoned well, add chicken essence, stir-fry evenly, then turn off heat 12. The cháng jiàng is ready to be served, full of flavor!

Place the mushrooms in and stir-fry evenly.

When the sauce has reduced significantly, add salt according to taste; since I used sweet bean paste, I added more salt, but if using broad bean paste, you generally don't need to add any. Adjust based on your preference.

When the vegetables are almost cooked and the salt is mostly added, add chopped green onions. If you prefer firmer carrots, reduce cooking time.

Stir-fry until the green onions are just done, then turn off the heat and add two spoons of chicken essence. Mix well before serving.
