Home-style Stir-fried Eggs with Tofu Salad

  Cucumber and eggs, although they seem unrelated, actually pair well together. Cucumber is crisp and egg is tender and smooth, making a quick dish.

  Ingredients:: 1 cucumber, 2 eggs.

Seasonings: 2/3 teaspoon salt,pepper powder 2/4 teaspoon, 1 tablespoon vegetable oil, 1 teaspoon cooking wine.

Steps:

First, cut the cucumber into chunks, not too thin. Beat the eggs, add 1/3 teaspoon salt, 1/4 teaspoon pepper powder, 1 tablespoon vegetable oil, and 1 teaspoon cooking wine, mix well;

Second, heat the pot, add an appropriate amount of oil, then add the cucumbers, add salt 1/3 teaspoon, 1/4 teaspoon pepper powder, stir-fry until half cooked, remove from heat and set aside.

Third, heat another pot, add about 2 tablespoons vegetable oil, pour in the egg mixture and cucumber;

Fourth, quickly stir-fry until the eggs are just done, then immediately remove from heat.

Do not overcook the cucumbers to prevent them from releasing too much water, affecting taste and appearance.
