How to Make Egg Tofu


Like those who enjoy eggs and tofu.For friends who like eating eggs and tofu, you can make homemade egg tofu.
Homemade egg tofu is simple to prepare,and it's healthier than restaurant versions, giving you peace of mind when consuming.
Main ingredients:
Dry eggs (5-6 pieces)Yellow beans(40 grams) Water (as needed)
Steps for making egg tofu:
. The day before, soak the beans in water overnight

. In the morning, wash and sort out any bad beans

. Put them into a blender

. Add 350 grams of water and blend at high speed for two minutes

. Cover with cheesecloth and pour into a small bowl

. Slowly squeeze out the liquid from the cloth, discarding the pulp.Pour the clear soy milk into a pot

. Bring it to a boil and remove foam . Cool down in bowls. Take another bowl of the same size,

and crack eggs equal to the volume of soy milk inside

. Beat the eggs until well mixed

. Strain through a sieve

. Mix with the soy milk and stir thoroughly

. Strain again for better texture

. Pour into a container with holes on the lid

. Cover, steam over medium heat for 25 minutes

. Remove after steaming is complete and let it cool down Place a dish on top of the container, then flip to remove the egg tofu.

The cut egg tofu is a success.

Tips:

. Soaking time varies with temperature; about 5-6 hours in summer, several more at temperatures below 10 degrees Celsius

1. Maintain an 8-9:1 water-to-dry bean ratio, neither too thin nor too thick
. Always sieve the egg liquid to ensure a finer texture
. The container lid should have holes for steam.
Alternatively, you can use cling film with small holes.
There should be vent holes on the lid of the storage box. Alternatively, you can use a food wrap with small holes poked in it.
