1. Clean and cut the ingredients into small pieces.
2. Add a little oil to the pot.

3. Fry the pork belly slightly.

4. Move the meat aside, then stir-fry the Doubanjiang until it releases red oil.

5. Add ginger and garlic, stir evenly.

6. Pour in enough water, peppercorns, dried chilies, and cooking wine at once.

7. Cook the pork belly for 8 minutes until half done, then add the potatoes.

8. Continue cooking until the potatoes are tender, then add a bit of salt.

9. Serve by sprinkling chopped green onions on top.

Tip:

Boil the pork until it's about 80% cooked before adding the potatoes; otherwise, they might turn too mushy.
