Three cups chicken Wing preparation steps:
1. Wash the chicken wings

2. Cut the spring onions into big pieces, ginger into slices

3. Boil the chicken wings in cold water, add spring onion pieces, ginger slices, and cooking wine at the same time

4. After boiling, cook for five minutes then remove from heat

5. Immediately cool down the chicken wings with cold water, drain off excess moisture

6. Prepare the main seasonings: one cup of oil, one cup of wine, one cup of soysauce and oyster sauce

7. Heat up the oil in a pot

8. Place the drained chicken wings into the hot oil

9. Fry until golden on one side then flip to fry the other side until golden as well

10. After both sides are golden, add wine, soysauce, oyster sauce, rock sugar, and an appropriate amount of water for simmering

Tips:
If you don't like wine, you can use rice wine or huadiao wine instead. Boiling the chicken wings and then cooling them down helps maintain their crispness.
